Curried Shrimp & Corn Chowder
I have always love fresh corn on the cob & shrimp so when I stumble upon a recipe which combines both of these delicious tid-bits I just had to share it with my followers! Eat up and enjoy!
Makes 8 servings
hands on time 1 hour,25 minutes
Put this in your favorites file for casual weekend get-together with friends.
1 medium-size sweet onion, diced
2 Tbsp.olive oil
2 Garlic cloves, chopped
2 large Yukon gold potatoes( 14 oz.), peeled & diced
1 large sweet potato (1lb.),peeled & diced
2 cups fresh corn kernels (approx. 5 ears)
1 (14 Oz's.) can chicken broth
1(13.5 Oz's.) can unsweetened lite coconut milk
2 tsp. curry powder
1 tsp. salt
1/4 tsp. pepper
Toppings: toasted coconut,thinly sliced green onions, coarsely chopped roasted peanuts.
Saute` onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add garlic & saute1 1minute. Add gold potatoes & next 7 ingredients; bring to a boil, stirring often.
Reduce heat, and simmer, stirring occasionally, 25 minutes or until potatoes are tender. Stir in shrimp: cook 4 to 5 minutes or just until shrimp turns pink. Season with seafood seasoning, salt & pepper to suit your personal taste. Serve with desired toppings.
What about this twist!
Shrimp & corn chowder: I am a dedicated curry fan, but you can just can make a traditional chowder if you prefer. Substitute 1 (12ozs.) can evaporated milk for lite coconut milk (Omit curry powder) This twist provides you with a blander taste.
