Shrimp Deviled Eggs
Makes 24
3/4 cup salad dress (or mayonnaise if you prefer)
3 Tbsp. minced green onions
1Tbsp. minced fresh parsley
11/2 Tbsp. Creole mustard
2 tsp. lelmon zest
1 garlic cloves, pressed
1/4 tsp. salt (to taste)
1/4 tsp. ground red pepper
12 large eggs
1 cup finely chopped cooked shrimp (about 3/4 lb. peeled and deveined cooked shrimp)
Whisk together first 8 ingredients in small bowl; cover & chill.
Place eggs in a single layer in a stainless-steel Dutch oven.(Don't use nonstick.) Add water to depth of 3 inches. Bring to a rolling boil; cover, remove from heat; let stand 15 minutes.
Drain immediately, and return eggs to Dutch oven. Fill Dutch oven with cold water and ice. Tap each egg firmly on the counter until cracks form all over the shell. Peel under cold water.
Slice eggs in half lengthwise, and csarefully remove yolks, keeping egg white halves intact. Mash yolks witth salad dressing mixture until smooth using a fork; stir in shrimp. Spoon yolk mixture into egg whites. Serve stat, or cover and cuill up to a day.
Herbed Potato Salad
Recipes fit for a Queen!
Hands-on time: 30 minutes
Total time: 1 hr,. 15 minutes
4 lb. Yukon gold potatoes
1/2 cup diced celery
1/2 cup chopped fresh flat-leaf parsley
1/2 cup finely chopped green onions
3 hard-cooked eggs, peeled & grated
1 cup salad dressing or mayonnaise(I prefer salad dressing in my potato salad)
1/2 cup sour cream
3 Tbsp. chopped fresh tarragon
2 Garlic cloves, pressed
1 Tbsp. Dijon mustard
1 tsp. salt
3/4 tsp. freshly ground pepper
Boil your potatoes in boiling water to cover 30 to 40 minutes or until tender;drain and cool 15 minutes. Peel potatoes, and cut into 1-inch cubes.
Stir together potatoes celery and next 3 ingredients in a large bowl.
Stir together salad dressing & next 6 ingredients; gently stir into potatoe mixture. Serve immediately, or cover & chill for 12 hours (often this allows the flavors to merge & really take hold.)
Delicious Peach Mojitos
Results approximately 81/2 cups

Total time: 15 minutes
Ingredients:
2 large peaches (about 1 lb.0. unpeeled and chopped
1/2 cup superfine sugar
1/4 cup fresh lemon juice (about 1 lemon)
1/2 cup firmly packed fresh mint leaves(Use the gack of your wooden sppon to muddle your mint.)
4 cups club soda, chilled
2 cups white rum
Garnishes: fresh mint sprigs, peach wedges
Process first 3 ingredients in a blender or food prcessor util smooth. (Yield should be about 2 cups.)
Muddle mint leaves against bottom & slides of a glass pitcher to release flavors. Your leaves should be bruised & torn.)Add club soda, rum, and peach mixture;sir to combine.
Serve stat over ice.
