Cornbread Madeleines
Soothing tea time snack that's easy to make & cute.
Makes: 4 dozen
Hands-on: 15 minutes
Preheat oven to 400
Ingredients:
Whisk together 2 cups self-rising white cornmeal mix, 1/2 cup all-purpose flour, 1/4 cup sugar in large bowl. Lemon-Thyme 1 Tbsp. lemon zest & 1 Tbsp finely chopped fresh thyme to dry ingredients.
Add 2 cups buttermilk, 1/2 cup melted butter; 2 large large eggs lightly beaten. Spoon butter into lightly greased shiny madel pans filling 3/4 full.
Bake in batches 16-18 minutes until golden brown.
Remove from pans serve hot or cool. If you would like to save some for a rainy day allow to cool 20 minutes or so place in freezer bags & place in freezer.
When ready to use place on cookie sheet, place in over 350 degrees for 6 minutes until done. To prevent over-cooking use a dark nonstick Madeleine pan, wrap the bottom of the pan with a sheet of heavy duty aluminum foil, shiny side down.
