Eats fit for a Diva!



Being the eldest of seven children from a single parent household meant I had a lot of responsibility at a very young age. I was preparing whole meals for my entire family by the tender age of 12. I believe that's perhaps how my liberal tolerance for preparing various food varieties & recipes regardless to whether or not I was liked it(obviously a skill born out of necessity & practicality). Ironically even today I continue to prepare dishes and recipes which I am acclaimed for but don't like & would consume myself". I was inspired to please the palates of others in addition to my own.  I am a firm believer in "To thy own palate be true", so I won't eat what I don't like unless I'm starving to death, but I have no problem preparing whatever for someone else.



I consider preparing meals for significant others as a labor of love, devotion, & a non-selfish act. This is why I also share recipes & surprising food tips with my readers which may not suit my palate but causes you to salivate.

Today I'm just going to provide some fantastic warm weather food & beverage tips for dinning AL fresco. :)

For frooty-Tooty yummy weather cocktails:

Fresh fruits are exotic & filled with vitamins & good healthy things like antioxidants that our bodies need & can be added to your beverages to make its flavor pop! Here's a simple one: Mix 2 oz. of Tangerine Vodka (or any other flavor you prefer), 2 berries of your choice and 1 strawberry & top with club soda & spritz of lime or lemon to taste.

Cilantro & lemon crab salad on avocado: Mix small amount of low-fat Hellman's salad dressing with fresh crab meant, dash in spices of your choice, add fresh cilantro & a squeeze of lemon. Use an ice cream scoop to place a delicious helping of salad into halved avocados & serve for an enthralling AL fresco treat!

Here's is one of those recipes I don't care for but my significant other devours them heartily so I have absolutely no problem preparing for others!

Fried Pickles
For Pickles:

Veggie or peanut oil, (for frying)
1/2 cup all-purpose flour
1 3/4 teaspoons Cajun seasoning
1/2 teaspoon Italian seasoning
dash of accent
1/4 teaspoon cayenne pepper Kosher salt
2 cups sliced dill pickles, drained

Fry pickles: Heat 1 inch of oil in a frying pan or deep fryer over medium-high heat until a deep-fry thermometer registers 370 degrees. Meanwhile whisk flour, Cajun seasoning, Italian seasoning, cayenne peppers,1/2 teaspoon salt & 1/2 cup water in large bowl until smooth. Spread pickles on paper towels and pat dry.

Add half of the pickles to the batter & toss to coat. Remove from the batter using a slotted spoon, letting the excess drip off, and add to the oil one at a time. Fry until golden brown, approx 2 minutes tops;remove with a slotted spoon & drain on paper towers. Return to oil to 375 degrees & repeat with the remaining pickles and batter. Best served hot with sauce on the side.

It's not a difficult recipe but the first time I heard about fried pickles a waiter brought a sample over to our table to try; Needless to say I was surprised but not impressed. I tried a chip but didn't care for it I prefer my pickles as-is, however my partner thoroughly enjoyed them.

For sauce:

1/4 cup salad dressing or mayonnaise
1 tablespoon drained horseradish
2 teaspoons ketchup
1/4 teaspoon Cajun seasoning
1/2 teaspoon sugar
Mix salad dressing, horseradish, ketchup, sugar, Cajun seasoning in bowl; place it on the side.

A French research study suggest that people who consume a pint or more of beer are 15% more likely to be bitten by mosquito than non-beer drinkers.I have never like beer but I'm sure that devoted beer lovers won't let this stop them gulping it down!
