Baked Chocolate Pudding

25 minutes to prepare
1 1/2 hours Total
12 Servings

Serving: Approximately 335 calories

4 g protein, 40 g carbohydrates, 18 g total fat (111 g saturated), 1 g fiber, 110 mg cholesterol, 30 mg sodium.

1 cup unsalted butter (2sticks), melted & cooled, plus a little more for greasing.

1/4 cup cocoa powder

1/2 cup all-purpose flour

4 extra-large eggs, at room temperature

2 cups sugar

1 vanilla bean,split, & scraped

1 Tbsp. framboise liqueur if you like

Vanilla ice cream, for serving.

Preheat your over to 325 F lightly butter 20 inch shallow oval baking dish.

Into medium bowl, sift together cocoa powder & Flour. In large bowl, with mixer on medium-high speed, beat eggs & sugar 5-10 minutes or until very thick & light yellow.

Reduce speed to low; add vanilla seeds, framboise (if using) & cocoa mixture. Mix until combined. slowly pour in butter; mix just until combined.

Pour mixture into prepared dish set in larger baking pan. Add hot tap water to pan to come halfway up side of dish.

Bake 1 hour. A tooth pick inserted 2 inches from side will come out clean. Center will appear very under-baked. Cool completely.

If you want to prepare it ahead of time, wrap; refrigerate up to 3 days. To serve, bring to room temperature. Serve with ice cream.
